Our starter is the heartbeat of every loaf. We feed it on a rhythm that matches production — strong enough for overnight doughs, mild enough that the crumb stays tender.

At home, less is more: room-temperature feeds when you bake often, fridge storage when you don’t, and a consistent flour so the culture stays predictable.
